Whenever I want something relatively healthy to eat, I make omelets. To make them healthier you can add even more veggies, the possibilities are endless.

I

ngredients

  • 3 eggs

  • 1 tablespoon milk

  • Salt and pepper to taste

  • Mozzarella or cheddar cheese to taste

  • Tomatoes, peppers, onions, spring onions, spinach, kale, or whatever vegetables you have in your fridge

  • Butter/ oil to cook with

Directions

  1. Melt one tablespoon butter in a medium skillet over medium heat. Place whichever veggies you choose to use in the pan. Cook for 4 to 5 minutes stirring occasionally until vegetables are just tender.

  2. While the vegetables are cooking beat the eggs with the milk for 3 minutes

  3. Remove the vegetables from heat, transfer them to another bowl. Add a little bit of oil into the skillet (used to cook veggies), then pour the egg mixture into the pan.

  4. Cook the egg for 2 minutes or until the eggs begin to set on the bottom of the pan. Gently lift the edges of the omelet with a spatula to let the uncooked part of the eggs flow toward the edges and cook. Before the center is dry, sprinkle salt and pepper onto the omelette.

  5. Then flip the omelet and let it cook for a minute and flip it over again

  6. Sprinkle the cheese over the omelet and spoon the vegetable mixture into the center of the omelet. Using a spatula gently fold the sides over. Let the omelet cook for another two minutes or until the cheese melts to your desired consistency. Slide the omelet out of the skillet and onto a plate and serve with whatever you want.
