Fluffy Pancakes Recipe

These are the softest pancakes that you will ever make!




When I was younger, I loved waking up on Sundays and seeing that my mom had made pancakes. When I grew up it was the first thing that I learned to make so I could have them whenever I wanted. These pancakes are so fluffy and only take about 30 minutes to make. We serve them with strawberries, butter and maple syrup but you can top them with anything from Nutella to bananas. I've included some topping ideas at the bottom of this post. This recipe makes approximately 4 servings.



Ingredients

  •  ½ cups all-purpose flour

  • 3 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon white sugar

  • 1 cup milk

  • 1 tablespoon vanilla

  • 2 egg

  • 3 tablespoons butter, melted

Directions

Step 1 In a large bowl, sift together the flour, baking powder, salt and sugar

Step 2

Separate the egg yolk from the white and add the yolk to the dry ingredients. Then

whip the whites until they’re fluffy. You can skip this step but it's what helps make the pancakes lighter.

Step 3

Make a well in the center and pour in the milk, whipped eggs, vanilla and melted butter; mix until smooth.

Step 4

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.


Tips

  1. Make sure your pan is hot before pouring the batter on

  2. When adding the whipped egg whites, make sure to gently fold them in

  3. You can top them with strawberries, honestly any fruit of your choice, honey, powdered sugar, whipped cream, or eat them plain
